Well, it has countless combinations, you can add it in every single meal you’re cooking at home, like chocolate fits in every dessert. Today, I am going to pair up this vegetable with cauliflower to prepare one of my favorite dish, Instant Pot Aloo Gobi.

It tastes way yummier than it sounds, the colorful addition of spices and the texture and taste of boiled potatoes when mixes with freshly cooked Cauliflower in a pot makes everyone’s mouth water.

What gives a bright yellow color to this tantalizing meal is the added turmeric and mashed potatoes that make it eye-catching. In addition to that, beautiful garnishing on top using parsley and coriander leaves completes its beautiful and tempting look.

How To Prepare Yummilicious Instant Pot Aloo Gobi

Serving (4 Persons)

Ingredients

  • Two medium chopped, sliced onion
  • Three plum tomatoes diced
  • 5 cups of cauliflower florets cut into big 3-inch pieces
  • Two medium potatoes peeled and cut into thin wedges
  • Two tablespoons of cooking oil ¼ teaspoon cumin seeds
  • ⅙ teaspoon turmeric
  • Two tablespoons mild Kashmiri red chili powder Less if using a spicier chili powder
  • 3 teaspoons coriander powder
  • 2 teaspoon cumin powder
  • 2- ¼ teaspoon of garam masala Add 1/2 for a medium spicy curry
  • kosher salt to taste
  • Coriander for garnish

Method

  1. Turn the Instant Pot to fry mode and heat the oil. Add some cumin seeds. And Sauté for 35 seconds.
  2. Add chopped onions and mix well. Cover the lid and Cook for 2 minutes. Add chopped tomatoes, close the lid and cook again for another minute.
  3. Now add turmeric, red chili powder, coriander powder, cumin powder, garam masala and salt for taste. Add peeled potatoes and cauliflower florets. Add two tablespoons of water. And Mix well.
  4. Put the Instant Pot lid on with the pressure valve to sealing. Select Pressure Cook / Manual high for 4 minutes.
  5. Turn of the Instant Pot flame. Quick Release and stir gently. Garnish cilantro. And Serve hot with paratha, chapati, dosa, or toasted pita bread.

Let’s Cook Aloo Masala

Serving (4-5 person)

Ingredients

  • 1¼ pound potatoes, boil until tender enough to be pierced or cut easily with a fork.
  • Add 2tbsps. Of vegetable oil (canola oil) or ghee. Adding ghee would add a delicious buttery flavor to your lunchtime meal.
  • Two teaspoon mustard seeds
  • Two teaspoon cumin seeds
  • Pinch Asafetida (optional)
  • ¼ tablespoon urad dal (optional)
  • 5 or 6 curry leaves, or the zest of 1 lime
  • ¼ cup of hot chilies( jalapeno or Serrano), roughly chopped
  • Two medium onion, roughly chopped
  • Two teaspoon ground TurmericSalt
  • 6 or 7 sprigs of cilantro, roughly chopped, plus extra leaves for garnish

How to Prepare Spiced Potato Masala

A perfect healthy dish for your family that can be prepared to overcome the terrible stomach growls. Despite its flavor taste, its garnishing makes it ten times more attractive.

Aloo Masala Prepration

1. Lightly mash the potatoes by using a smasher or your hands. You can also use a fork to do this step if you like, don’t mash them so much.

2. In a cooking pan, heat the oil in high flame until it gets to shimmer.

3. Add the mustard seeds when the oil is hot. Once they start to pop, add the cumin seeds, asafetida, and urad dal. Stir continuously to keep everything moving, and cook well until getting pleasant aroma and turning to brown – just for 1 minute to 2 minutes.

4. Stir the curry leaves and chopped chilies, and continue the stirring for another 25 seconds.

5. Add the chopped onion, turmeric, and two big pinches of salt, and stir well. Continue cooking, stir the onion continuously to get soft and brown color

6. Now add the potatoes, along with ¼ cup of water. Gently stir the potatoes with spices and onion to get coat well, then cover the lid and let it cooks for few minutes and get mixed with the flavor

7. Off the flame, and gently stir with chopped coriander.

8. Give a better taste by adding more salt or some spices as desired. Serve the dish, into a dose, and garnish with the coriander leaves.

This was the traditional recipe of Aloo Masala used my most of the people around the world. But this dish can be prepared by using different spices and techniques.

Let’s Cook Delicious Gravy with Spinach with Indian Cottage Cheese

The best part about Palak Paneer recipe is that you don’t have to rush to the grocery store to buy a large number of ingredients, because this recipe can be easily prepared by using simple ingredients from your pantry. Worth the time and fun to make! So easy to prepare and so tasty! 

Let’s have a look into ingredients and cooking method.

Ingredients

  • Spinach 1 LBS (450 Grams)
  • 1-2 Red Tomatoes
  • 1 large onion Chopped
  • Five large garlic cloves, divided, three whole and two finely chopped
  • 2-inch ginger
  • One green chili, or more to taste
  • One tablespoon oil, 15 ml, I used avocado oil
  • One large onion, finely chopped
  • 1/4 cup water, or as needed
  • 3/8-1 teaspoon Garam masala
  • 1/6 teaspoon organic turmeric powder
  • 1/6 teaspoon red chili powder, or to taste
  • salt, to taste
  • 2-3 tablespoons heavy cream or adjust to taste
  • 230 grams paneer, cut into cubes
  • 1/4 tablespoon Kasuri Methi, crushed, dried Fenugreek leaves
  • lemon juice, to taste

Instructions

  1. To a pot of boiling water, add required salt, and then spinach leaves to it. Blanch the spinach leaves for 3 to 4 minutes until wilted.
  2. Take them out and put them in ice-cold water. It helps the leaves in retaining their green color.
  3. To a blender, add the simmered spinach along with tomato. Also add three cloves of garlic, ginger and green chili. Puree to a smooth paste and set for a While
  4. Heat a pan on low flame. Once the pan is heated, add the oil and then add a remaining two cloves of chopped garlic. And Saute for a few minutes until it starts changing color.
  5. Then add the chopped onions. Fry the onion for 3 to 4 minutes until it gets brown color and translucent.
  6. Add the prepared spinach puree and mix. Also, add around 1/4 cup water at the point.
  7. Close the pan and let it cook for 7-10 minutes on low flame. The spinach will bubble a lot. Blend at regular intervals to get avoid of sticking at the bottom.
  8. Once the spinach cooked, add the red chili, turmeric powder, powder and required salt. Mix well and cook for 2 minutes.
  9. You may also add ½ teaspoon of sugar at this point if you like.
  10. Now add the heavy cream and combine well. Add the paneer and mix well. Let the curry cook for about 4 to 5 minutes. Off the flame, add lemon juice and Kasuri Methi and mix.
  11. Serve Palak Paneer hot with naan or Roti and Zeera rice.

What we Desi people miss the most while living abroad? Any guesses? Yes, it’s our traditional food cooked by mothers or wives at home. The aroma and taste, Ah! My mouth started watering. Among many Indian home-cooked meals, my favorite is Paneer Tikka Masala. 

After moving to the states, the first challenge every person faced is how to arrange daily meals. Should they order meals three times a day? This option isn’t healthy nor economical as well. Then, what should one do to enjoy traditional meals while living in the USA? 

Of course, you’ve to cook delicious meals either you’re on Student Visa or any non-residence visa. Mom is not here to take care of and cook delicious meals.

You might find it challenging to get into the kitchen and cook food for yourself. If you don’t even know how to fry an egg, trust me after reading this article; you’re going to love cooking. Kitchen desi will help you to feel right at home.

Unbelievably Delicious Paneer Tikka Masala Recipe

Ingredients

  • 283.5 g Paneer 1/2-inch pieces (cubed shaped)
  • 2 tablespoons unsalted butter
  • 4 medium-sized tomatoes (puree) / 1 can of diced/crushed tomatoes (14oz)
  • 1 medium onion (chopped)
  • 1 tablespoon ginger-garlic paste (1/2-inch ginger + 3 cloves garlic)
  • ½ cup heavy cream
  • 2 teaspoon Coriander Powder
  • 1 ½ teaspoon Allspice powder
  • 1 teaspoon Cumin Powder
  • 2 teaspoon dried Fenugreek leaves (Kasoori Methi)
  • ½ teaspoon Paprika
  • 1 teaspoon Turmeric
  • ½ teaspoon Red Chili Powder
  • ½ teaspoon Cardamom Powder (optional)
  • 1 teaspoon salt (to taste)
  • ½ cup of water

For Garnish

1 tablespoon chopped cilantro

Method

  1. Turn on Instant Pot on saute and wait for 30 seconds. Now add butter and chopped onion and sauté for about one minute or until translucent.  
  2. Then add ginger-garlic paste and let it simmer for 30 seconds. Turn off sauté.
  3. Now add tomato puree, water (depending on your cooker size), and all spices (coriander powder, allspice powder, paprika, red chili, turmeric, and cumin powder). Stir well.  
  4. Add Fenugreek leaves ¼ cup heavy cream. Save the remaining for later use.  Combine well and close the lid and set the to “sealing’. Cook on Manual (high) for 3 minutes, Natural Release (NR) for 5 minutes. Release remaining pressure by moving the valve to the venting position.
  5. When the pin drops, open the lid. Blend the mixture by using a hand blender or a mixing machine. Blend the mixture into a smooth texture. Turn on sauté.
  6. Now add paneer cubes, ¼ cup heavy cream, and simmer for 1-2 minutes, till you reach your desired sauce consistency.
  7. Garnish with fresh cilantro/coriander.
  8. Serve hot with Naan or Jeera rice.

Gobi Manchurian is a very famous recipe among Indians. This is mostly used as a starter. This can also serve as the main course. This homemade recipe use cauliflower with deep-fried and frittered with the vegetables and then stirred with the sauces. The spicy sauces give additional flavor and taste.

What is Gobi Manchurian?

Gobi Manchurians is a famous India, Northeast China. Made with cauliflower, cornflour, soya sauce, ginger, and garlic, vinegar, chilly sauce.

What to serve with Gobi Manchurian?

Gobi Manchurian served as a starter or snacks also with noodles or fried rice.

Preparation Method

Preparation of Gobi Manchurian

  1. Clean 300 grams of gobi and cut the florets to medium size.
  2. Add them to 4 cups of hot water and rests for 6minutes
  3. Next, drain the gobi completely to a colander or spread on clean cloth till no Moisture remains on the gobi
  4. You can do this and set aside, any moisture in the gobi will cook it too soft and not crispy
  5. Heat the oil for deep frying on medium flame
  6. Meanwhile prepare the batter by adding cornflour, all-purpose flour, black pepper, chili powder and salt to mixing bowl
  7. Next, mix and add the water, little by little as needed, and make a free-flowing Lump batter. Consistency has to be medium and not much thick or very Smooth. adjust salt as required by tasting the batter
  8. Then add all the gobi florets to the mixture in batches and coat them well

Frying Cauliflower

  1. When the oil is hot as required, check by dropping a small batter to the hot oil. The recipe has to rise without browning. It is the correct temperature.  
  2. Next, Pick up each cauliflower floret with a spoon or fingers by and drop them one by one to the hot oil. The heat has to be in medium flame, and it should increase slightly when the more gobi added. Keep the fire to medium and fry until the florets turn into golden and crisp. Keep stirring in between for even frying.
  3. Drain it by tissue or steel colander. And Repeat the same steps of adding the rest of the cauliflower florets to the batter, coating them well, and then frying them in hot oil until crisp.
  4. For extra crisp gobi Manchurian, you can also refry the once gobi again in oil. I usually do not do it as frying them once is good enough to get a perfect crisp Manchurian with this recipe.

How to Make Gobi Manchurian

  1. Add red chili powder and little water to get a paste and place aside. This step is just optional, and it is used mainly for the red color.
  2. Heat 1% tablespoons oil in a full pan.
  3. When the oil turns hot, add ginger, garlic and green chilies. Saute for one or two minutes.
  4. Next, add spring onions and capsicum. Saute them in a high flame for 2 or 3 minutes.
  5. Add, red chili sauce, soya sauce, tomato ketchup, red chili paste, vinegar, and sugar.
  6. Mix and add water. Mix and cook stirring and add pepper.
  7. Cook on medium flame until the sauce thickens.
  8. Off the stove, and check the taste.
  9. Then sauce has to be slightly sour, sweet, and hot. If it is needed, you can adjust the salt and add some more seasonings as well.
  10. Allow the sauce to cool for 2 to 3 mins.
  11. Add fried cauliflower and stir to coat the gobi thoroughly with the Manchurian sauce.
  12. Garnish Gobi Manchurian with spring onion greens.
  13. Serve as a side dish or as a main with noodles or fried rice.

Kadai Paneer – One of the best Paneer recipe famous among Indian people. Main items needed to prepare this are Indian cottage cheese and bell peppers.

You can get iconic restaurant style Kadai Paneer in sitting home. You are not only saving gets its unique flavor from freshly ground spices like coriander and red chilies! Enjoy it with naan or paratha.

Paneer is one of my husband’s favorite vegetable (if you consider it as a vegetable that is, Indians definitely do!) and green pepper or capsicum as we call it in India is mine.

This dish is called Kadai Paneer because it’s cooked in a kadai. But if you don’t have a kadai you can simply use a wok or any other pan. I actually did not make it in a kadai!

Kadai Masala
This kadai paneer recipe gets its unique flavors from freshly ground masala. It’s called the kadai masala.

Here’s all that I added to my kadai masala

• Coriander seeds
• Dried red chilies
• Green cardamom
• Fennel seeds
• Cloves

Ingredients

  • 3 tablespoons  coriander seeds

Instructions

Kadai Paneer

  • Make the Kadai MasalaMake the Kadai Paneer
    To a small kadai or pan, dry roast the spices for kadai masala for 3 to 4 minutes on medium heat until fragrant.  Add more red chilies for a spicier masala.
    Remove kadai from heat and transfer the roasted spices to a spice grinder.
    Let it cool down a bit and then grind to a fine powder. Set aside. You can also make this kadai masala in advance and store it.
    In a large kadai or any other pan, now melt butter with oil on medium heat.
    Add the chopped onion and saute for 3 minutes until softened. Then add the sliced green chili and ginger garlic paste and saute for another 1 to 2 minutes.
    Then add the chopped tomatoes and tomato paste. Mix and cook for around 6 minutes until tomatoes are really soft.
    Then add 3 to 4 teaspoons of the kadai masala that you prepared earlier (or add the whole thing if you like it spicy). Also add the garam masala, kashmiri red chili powder.
    Add half of the ginger julienne. Stir the spices and cook for 30 seconds.
    Then add 1/2 cup water and stir.
    Add cream, salt and sugar and mix. Cook for one minute.
    Add in the paneer and bell peppers (capsicum) and mix. Cover the pan or kadai with a lid and cook for 5 to 6 minutes on medium heat until bell peppers are slightly softened. You only want them half cooked here.
    Crush kasuri methi and add to the pan.
    Garnish with remaining ginger julienne and cilantro. Serve kadai paneer with naan or paratha.

Notes

To make this Kadai Paneer spicier
• use double the amount of red chilies while making the kadai masala.
• use the entire kadai masala in the recipe. I have used 3 to 4 teaspoons of the masala and was left with some.
• use 1/2 teaspoon garam masala in place of 1/4.
